Yes, if you take the Skypier from HKIA to Macau or other PRC ports, you do not have to clear the HK costom. Just buy the ferry ticket (the counter is on the left hand side before body temperature screening area (or used to be, the bottle-neck area @500m directly in front of the toilet/money exchange before custom), used the escalator (before the custom clearing area) to go downstair to go to an area for the coach for transfer to ferry terminal. They will pick your luggage and transfer directly to the ferry terminal.

For the return journey, I believe the PRC ports (their web sites will indicate) would transfer the luggage directly to the airlines (where they have checked in counters in the ports). I only have experience traveling from Macau to HKIA.

if u collect ur check-in luggage, it means u have clear immigration and u cannot get back inside HKIA again ...
just go to skypier counter inside HKIA airport before immigration and booked ur ticket and hand them ur check-in luggage tag and they will retrieve it for u but there's a cut-off time so that they can make it for the ferry ...

as for the trip back from ZH to HK ... it's as u have said ..
